Preparation of Cu NPs for detection of hydrogen peroxide residues in foods

Abstract

Hydrogen peroxide (H2O2),as a strong oxidant,can make the body lose its antioxidant capacity and further cause various diseases.Copper nanoparticles (SAC-Cu NPs) were synthesized using S-allyl-L-cysteine (SAC) as template.The fluorescence intensity of copper nanoparticles can be obviously quenched by H2O2.A fluorescent probe based on SAC-Cu NPs was developed for highly sensitive and selective detection for H2O2.It had a good linear response in the range of 0.1×10-6mol/L to 50×10-6mol/L with a detection 0.79×10-7mol/L limit.In addition,the method in consistency with the GB method when employed to detect H2O2 in foods,which shown its great potential to effectively protect the environment and ensure food security.
